Understanding Tables

Hello All,
I have been following this site for a few years. When I first started looking at kayaks I thought about building one but decided to buy a plastic boat a Tarpon 100, to see if I liked it. I love the boat and have fished out of it comfortably for the last couple of years. While I started doing camping trips last year and have grown to love it. But with this new love a new kayak is in order, something with a little more packing room.
I have watched many posts and I believe that I have gotten the jiffs of things. I decided to buy the book canoecraft to understand if I wanted to do a STG or a strip built? I started reading and got to the "Table of Heights" and "Table of Half-Breadths" I thought that I understood these but my curves are not coming out in the fashion that are making sense I will try to add a picture of what I have so far.
I have googled these tables and many people refer to lofting? Would anyone be willing to give a explanation. I just would like to understand this before moving on in the book.
