I've been researching paints, and I see I can pretty much go oil base, or water base, but no mix. Water base dries faster and is less messy, but also appears to be less durable and doesn't finish as smoothy?

Which is better?

It depends on the specific paint but water based generally has much less risk of a bad interaction with epoxy than oil based. Primer coats can solve that issue. But be careful.
