not sure I need to ask this but...

When glassing the Deck I'll apply a coat of epoxy, whilst it's getting tacky I'll put on the glass with a overlap onto the hull (as instructions)

the centre bit I can cut out in it's entirety or I can cut out some from the centre and leave some overlap to wrap around to the underside of the deck even taking the side bits onto the hull on the inside.

Which approach would/do you do?

Even with my very limited experience I would think that getting the fibreglass to behave around a realy tight bend like that would be difficult. As soon as you got one side to sit nicely you would probably disturb it whilst trying to get the stuff neat on the second side.
Others with a lot more nouse than me might disagree. If they do I might just have to kill them.

wetting the application area first and then applying the fiberglass woks well with fiberglass tape (thin strips of fiberglass cloth). It can be a pain trying to follow that procedure using larger pieces of fiberglass cloth. For applying larger cloth, I find it easier to lay the cloth dry, then wet out with epoxy.

You can split the application in 2 halves and over lap the glass a little. But when working on convex surfaces (outside of hull), it's really not necessary.
