Ordered plans for the Freedom 13...will be starting to get ready to begin thinking about actual doin' it purty soon...any experience with this "EZ Fillet" stuff? OK to use instead of mixing up an epoxy/wood flour mix? From what I can read, that's exactly what it's for, to be used betwen the butts when creating a panel, then glass over the joint of course, and also used between the strips. Looks real handy...and color consistent, etc.

I've used it and it's nice but a little expensive. It is easier to make small batches, which you'll need to do when building a small boat.
You'll probably have a bunch left over but it has its uses for household projects. If you mix your own using a woodflour filler, you start to get a good feel for it and can thicken or thin the filleting mixture based on what you want to do. This is not something you need to know how to do, but it helps experienced builders as you get into more complex projects. I THINK you could do the same with EZ Fillet by either adding a little epoxy or adding a little filler/woodflour but check with System 3 to be sure.
So it doesn't have any issue beside maybe cost and you loose a little flexibility (in a work planning sense not structural).
